Lebanese mint garlic yogurt dip and grilled red potato grape tomato salad

Lebanese Mint Garlic Yogurt

1 c FAGE Greek 2% yogurt
2 cloves garlic, minced
Small bunch of fresh mint, finely chopped
1 1/2 t olive oil
1 t fresh lemon juice
Salt to taste
Stir until smooth. Delicious with grilled potatoes and pita bread.

Arugula Heirloom  Tomato Salad

Yellow heirloom tomato
Original oven roasted Almond Accents
Scallions, chopped

Honey Shallot Vinaigrette Dressing

1 t Honey
2 t Maille Dijon Mustard
1 T shallots, minced
1/4 c white wine vinegar
1/3 c olive oil
Season with salt and pepper
Drizzle in oil to mixture whisking constantly to emulsify


Grilled Potato Grape Tomato Salad
2 lbs red potatoes, cut in half
1 c Grape tomatoes, halved
1/2 c scallions, chopped

Lightly coat potato halves in olive oil and salt n pepper before grilling.  After potatoes are slightly crisp and golden, add to tomato mixture tossing also with dressing from salad recipe above.
