Peaches for me

Grilled Peach Salad with candied almonds and pistachios

Before prepping nuts and dressing, sliver generous amount of red onions and soak 30-60 minutes in ice water to cut the intensity and crisp up the texture of the onion. Combine all just at serving time arranging the peaches on top.

Candied Nuts
1/4 c water
2 T sugar
1/2 cup raw slivered almonds
1/2 c unsalted pistachios, shelled

Cook water and sugar at med-high a few minutes until mixture is syrupy. Then add nuts and cook, stirring until golden brown. Spread onto waxed paper or foil to dry breaking up larger bits or clumps. Add to salad with dressing.

Blue Cheese Vinaigrette
1/4 c Organic Apple Cider Vinegar
2 T EVOO
2 T fresh lemon juice
2 T brown sugar
2 T organic ketchup
1/2 t granulated garlic
1/2 t onion powder
1/4 t cayenne pepper or paprika
1 heaping T blue cheese crumbles
