Rhubarb Strawberry Tart with Vanilla Sauce

I tried Rhubarb Pie with Swedish Vanilla Sauce only once before now. I was actually in Sweden! so it tasted much better of course being in an exciting foreign land. I wanted to reminisce and have some nostalgic moments, so I tried to recreate what I remembered it to taste like. Here is what I came up with the other day:

Rhubarb Pie

3 cups fresh rhubarb, chopped

1 cup fresh strawberries, chopped

1 1/4 cups white sugar

5 tablespoons all-purpose flour

1 tablespoon butter

Preheat oven to 425 degrees F.

Combine sugar and flour and sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Then sprinkle with remaining sugar and flour. Spread the small pieces of butter out evenly on top.

Place pie on lowest rack in oven and bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for about 45 minutes. Serve warm or cold with heaping spoonful of vanilla sauce poured over each slice at serving time.
