Roasted Red Peppers, Spinach, Feta, & Egg Scramble
- Milk (for whisking into eggs-optional)
- Roasted red peppers from jar to keep it simple (or oven roasted), chopped
- Fresh Spinach
- Feta, crumbled
Directions; Heat large skillet or pan on stove to low-medium heat. Whisk eggs with a few teaspoons milk. Pour eggs into pan and start scrambling. Add salt and pepper. Then add a few handfuls of spinach, and chopped red bell peppers. Add feta close to the end of cooking time where it’s slightly melted into the scramble. Serve with toast, English muffin or bagel—or keep it carb free and just as tasty!
